Achievements:
Ms. Fury is particularly proud of two key projects in her organization that focus on improving children’s health by promoting whole, plant-based foods and educating young people about the importance of nutrition: Six Million Seeds and More Plants on Plates. Six Million Seeds is a project where Ms. Fury and her team go into schools to teach children about healthy eating through six core food groups: fruits, vegetables, nuts and seeds, beans and legumes, whole grains, and mushrooms. The name “Six Million Seeds” refers to the six food groups and the millions of children in the country who are eating poorly. The goal is to inspire healthier food choices and raise awareness of the importance of nutrition. “Seeds” is an acronym for *Students Educated in Environment, Diet, and Sustainability*. While the project often involves planting seeds and teaching children how to grow their own food, it also includes lessons on nutrition, food systems, and sustainability, offering a hands-on experience for the kids. The second project, More Plants on Plates, focuses on increasing the availability of plant-based meals in schools, particularly in Illinois. The initiative provides resources and support to food service directors to help them offer plant-based options, while also encouraging parents and students to request these meals. Through this project, Ms. Fury aims to make plant-based eating more accessible and widely adopted in schools.
